We were on an early November hunt in southern Montana last year. I took my Guardian with small Light Outdoors stove. I spent 5 nights in it, some solo, some with another person, with and without the stove.
We had about 8" of snow on the ground and didn't have any problem getting it pitched...

The Guardian can be finnicky to get a good pitch. A couple things that have helped me:
Have the stakes for the door as close to the bottom of the door as possible. You don't want any excess cordage between the bottom of the door and the stake.
Angle the trekking poles out a little bit so...
It really depends on what type of hunting your planning on doing. Are you planning on spike camping, or changing campsites frequently? Are you planning on sitting and glassing for extended periods of time? Or, are you planning to try to cut some fresh tracks?

I did not get the combo from them. I have the small (12") Lite Outdoors stove that I use in my Guardian. It's a really good combo. I was getting anywhere from 1-2 hours of burn time in that little stove and it kept the tent warm. We were able to dry our socks and boots out at night...
The Seek Outside Guardian is a palace for one. I spent a night in mine solo and it's an absolute palace for you, gear, and a small stove.
Otherwise, you'd have to jump up to a 4 person tent like the Absaroka or Seek Cimarron
I think you're spot on with Diamondback 10x42s.
I've looked through two pairs of Crossfires and one pair of Diamondback HDs. Both pairs seemed extremely hazy and I wouldn't recommend them. I'd spend the little extra money to be able to see significantly better with the Diamondback HDs.

I picked up two of the Sofirn D25LR headlamps. These replaced my black diamond cosmo headlamp. Better run times, brighter, can recharge the battery and/or replace the 18650 battery if you don't have time to charge it.
I'd look at the Pelican Vault 730 or 800. I have a 730 and it's worked well for my trips. I haven't flown with a bow, but I have used it for my disassembled shotgun. I typically pull the foam out and pack it with everything I can.

I'd take different combinations of those optics on trips and see what works best for you. That's a nice luxury most don't have. Keep what you like the best and sell the rest.
